  • 1 small avocado, diced
  • ½ cup diced red bell peppers
  • ¼ cup finely minced red onions
  • 2 tbsp minced jalapeño peppers
  • 2 tbsp minced fresh cilantro
  • 1 tbsp freshly squeezed lime juice
  • Pinch of sea salt
  • ½ cup light mayonnaise
  • 1 tbsp freshly squeezed lime juice
  • ½ tsp grated lime zest
  • 1/8 tsp chili powder
  • 1/8 tsp ground cumin
  • 1 ½ lbs mild white fish fillets
  • 2 tsp olive oil
  • Sea salt
  • Black pepper
  • 1 tbsp freshly squeezed lime juice
  • 8 small soft corn tortillas

Instructions

  1. Prepare the Mango Salsa: Combine diced mangos, avocado, red bell pepper, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl. Mix gently, cover, and chill until ready to use.
  2. Whisk Together Zesty Lime Mayo: In a small bowl, whisk together mayonnaise, lime juice, lime zest, chili powder, and cumin. Refrigerate until serving.
  3. Season and Prepare Fish: Pat fish fillets dry and season both sides with salt and pepper.
  4. Sauté the Fish: Heat olive oil in a nonstick skillet over medium-high heat. Cook fish for 2–3 minutes per side until lightly browned and fully cooked through.
  5. Drizzle with Lime Juice: Transfer cooked fish to a plate and drizzle with fresh lime juice.
  6. Assemble the Tacos: Break fish into bite-sized pieces, place into warm tortillas, drizzle with lime mayo, and top with mango salsa.
