A quick and comforting Italian dish featuring creamy butter beans, fresh spinach, and sun-dried tomatoes, perfect for a simple yet flavorful meal.

  • 2 cans white beans (cannellini or navy beans), rinsed and drained
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: Parmesan cheese for serving

Instructions

  1. Melt the butter in a large skillet over medium heat until bubbly and fragrant.
  2. Add the minced garlic and sauté until fragrant.
  3. Stir in the chopped sun-dried tomatoes and cook for a couple of minutes.
  4. Combine the white beans and spinach in the skillet, stirring gently to combine.
  5. Season with salt and pepper to taste.
  6. Cook until the spinach is wilted and heated through, about 5-7 minutes.
  7. Serve warm, optionally topped with freshly grated Parmesan cheese.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave, adding a splash of water or broth if needed.
