Turkey Stuffed Peppers

Hearty and nutritious turkey stuffed peppers, filled with ground turkey, rice, and spices.

Ingredients

  • 4 bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the chopped onion and minced garlic over medium heat until softened, about 3-4 minutes.
  4. Add the ground turkey to the skillet, and cook until browned and fully cooked through, about 5-7 minutes.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper until mixed and heated through.
  6. Spoon the turkey and rice mixture into each prepared bell pepper.
  7. Place the stuffed peppers in a baking dish, cover with foil, and bake for 30 minutes.
  8. Uncover and sprinkle shredded cheese on top of each pepper, then bake for an additional 10 minutes until melted and bubbly.
  9. Remove from the oven and let cool slightly before serving. Enjoy hot!

Notes

Great served with a fresh salad or garlic bread. Leftover stuffed peppers can be stored in the fridge for up to 3 days or frozen for a month.
