A refreshing and indulgent dessert with layers of creamy cheesecake, zesty lemon curd, and fluffy meringue.

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup lemon curd
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar

Instructions

  1. Preheat your oven to 325°F (160°C) to create the perfect environment for our cheesecake.
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture firmly into the bottom of a springform pan to create a solid crust.
  3. Beat the softened cream cheese until it’s smooth and creamy. Gradually add in the powdered sugar and vanilla, blending until well combined and heavenly.
  4. Add the eggs one at a time, mixing well after each addition. Then, stir in the fresh lemon juice and zest until everything is smooth and velvety.
  5. Pour the luscious cheesecake filling over the prepared crust. Bake for 45-50 minutes, or until set. Once done, let it cool to room temperature.
  6. Once the cheesecake has cooled, spread the vibrant lemon curd over the top, adding that extra zing of lemon flavor.
  7. In a clean bowl, whip the egg whites along with the cream of tartar until soft peaks form. Gradually add in the granulated sugar and continue whipping until you achieve stiff peaks.
  8. Spread the fluffy meringue over the lemon curd, creating enticing peaks that will bake to a beautiful golden color.
  9. Return the cheesecake to the oven and bake for an additional 10-12 minutes, until the meringue is lightly browned.
  10. Let it cool at room temperature for a while before refrigerating. Serve chilled for the best flavor and texture.

Notes

Store any leftovers in the refrigerator, tightly covered, for up to 3 days. The meringue may lose its fluffiness over time, but the flavor will remain delicious!
