Ingredients

Scale
  • 2 pounds ripe tomatoes

  • 4 cloves garlic, unpeeled
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh basil leaves
  • 1 cup heavy cream
  • 1 tablespoon balsamic vinegar
  • Grilled cheese (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet along with the chopped onion and unpeeled garlic. Drizzle them with olive oil, salt, and black pepper.

  6. Pour the blended mixture into a pot and gently heat it on the stove until warmed through.

Notes

For a lighter version, substitute heavy cream with coconut milk or vegetable broth. Pair with croutons or a sprinkle of parmesan for added texture.
