These vibrant lemon raspberry swirl bars bring a delightful balance of tangy and sweet flavors, perfect for summer picnics or afternoon tea.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 1 cup raspberry puree (fresh or frozen)
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. Creaming together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs, lemon juice, lemon zest, and salt until well combined.
  4. Add the flour gradually and mix until just combined.
  5. Mix the raspberry puree with cornstarch in a separate bowl.
  6. Pour half of the lemon batter into the prepared baking dish.
  7. Drop spoonfuls of the raspberry mixture over the lemon batter.
  8. Pour the remaining lemon batter on top of the raspberry mixture.
  9. Swirl the raspberry into the lemon batter with a knife.
  10. Bake for 25-30 minutes or until a toothpick comes out clean.
  11. Allow the bars to cool before slicing.

Notes

Serve with whipped cream or vanilla ice cream for an added treat. Store in an airtight container at room temperature for up to 3 days.
