  • 4 chicken breasts
  • 1 jar (16 oz) pepperoncini
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat until glistening.
  2. Add the sliced onion and minced garlic. Sauté until the onions turn translucent and the garlic is fragrant, about 2-3 minutes.
  3. Sprinkle the chicken breasts with salt and pepper, then carefully add them to the skillet for a good sear.
  4. Pour the chicken broth into the skillet and mix in the pepperoncini with some jar juice.
  5. Cover the skillet and let it simmer for 20-25 minutes until chicken is cooked through.
  6. Remove the lid and let it bubble for an additional 5 minutes to thicken the sauce.
  7. Garnish with fresh parsley before serving.
