A delightful marriage of sweet honey and tangy lime flavors, resulting in juicy grilled chicken stacked with avocado over fluffy rice.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1/4 cup honey
  • 1/4 cup fresh lime juice (about 23 limes)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chopped fresh cilantro (for garnish)
  • 1 avocado, sliced (for serving)
  • 1 cup cooked rice (for serving)
  • Lime wedges (for serving)

Instructions

  1. Whisk together the marinade ingredients in a medium bowl.
  2. Place the chicken in a zip-top bag and pour the marinade over it. Refrigerate for at least 30 minutes.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and discard the leftover marinade.
  5. Grill the chicken for 6-7 minutes on one side, then flip and cook for 5-6 minutes until cooked through.
  6. Let the chicken rest for 5 minutes before slicing.
  7. Assemble the stack by layering sliced chicken over cooked rice, topped with avocado and cilantro, and serve with lime wedges.

Notes

Marinate the chicken for several hours or overnight for more flavor. Check internal temperature to ensure chicken is thoroughly cooked.
