A warm, hearty taco soup packed with bold flavors and customizable toppings, perfect for gatherings and family dinners.

Ingredients

  • 1 pound ground beef
  • 1 can Rotel tomatoes
  • 1 packet ranch seasoning
  • 1 can black beans (drained and rinsed)
  • 1 can corn (drained)
  • 1 can beef broth
  • 1 packet taco seasoning
  • 1 cup water
  • Salt and pepper to taste
  • Toppings (e.g., cheese, sour cream, avocado, tortilla chips)

Instructions

  1. Brown the ground beef in a large pot over medium heat until fully cooked. Drain excess grease.
  2. Add the Rotel tomatoes, ranch seasoning, black beans, corn, beef broth, taco seasoning, and water to the pot.
  3. Stir well to combine all ingredients, ensuring each flavor gets to know one another.
  4. Bring to a boil, then reduce heat and let it simmer for about 20 minutes.
  5. Taste and adjust with salt and pepper according to your preference.
  6. Serve hot in bowls with customizable toppings.

Notes

For a vegetarian version, substitute ground beef with lentils or mushrooms and use vegetable broth.
