Delicious Taco Ranch Bites that combine ranch dressing with taco seasoning, making them perfect snacks or appetizers.

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • ½ cup ranch dressing
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced bell peppers (mixed colors)
  • 1 cup black beans (drained and rinsed)
  • ½ cup corn (frozen or canned)
  • 1 cup tortilla chips, crushed
  • Fresh cilantro, chopped (for garnish)
  • Optional: sliced jalapeños, sour cream, guacamole

Instructions

  1. Brown the Meat: In a large skillet over medium heat, brown the ground beef or turkey for about 5-7 minutes, breaking it apart with a spatula until no longer pink. Drain any excess fat.
  2. Add Taco Seasoning: Sprinkle the taco seasoning over the browned meat, followed by 1/4 cup of water. Stir well, allowing the flavors to meld while the meat cooks for an additional 3-4 minutes.
  3. Mix in Ranch Dressing: Remove the skillet from the heat, and pour in the ranch dressing. Mix everything until the meat is well coated in that creamy goodness.
  4. Stir in Veggies: Add the diced bell peppers, black beans, and corn. Stir gently to combine, allowing the colorful veggies to add freshness and crunch.
  5. Combine Crushed Chips & Cheese: In a large mixing bowl, combine the crushed tortilla chips with half of the shredded cheese. This mixture will add texture and stickiness to our bites.
  6. Form the Bites: Scoop out a generous amount of the taco filling and place it atop a bed of the chip mixture. Sprinkle some of the remaining cheese on top. Form into bite-sized balls or shapes.
  7. Bake Until Golden: Preheat your oven to 375°F (190°C). Place the prepared bites on a greased baking sheet and bake for about 15 minutes or until the cheese is melted and the edges are golden brown.
  8. Garnish & Serve: Once baked, remove from the oven. Garnish with fresh cilantro, and serve with optional toppings like jalapeños, sour cream, or guacamole for an extra flavor boost!

Notes

These bites pair well with zesty salsa or refreshing guacamole. Serve them with a mixed greens salad for a complete meal.
