Delightful fritters made with fresh rhubarb, perfect for brunch or a sweet treat.

Ingredients

  • 1 cup rhubarb, chopped
  • 1/2 cup sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Oil for frying
  • Powdered sugar for dusting (optional)

Instructions

  1. In a bowl, combine chopped rhubarb and sugar; let sit for 10 minutes.
  2. In another bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, mix milk, egg, and vanilla.
  4. Now gently fold the wet ingredients into the dry mix until just incorporated.
  5. Once your batter is ready, fold in the rhubarb mixture.
  6. In a frying pan, heat oil over medium heat.
  7. Drop spoonfuls of batter into the hot oil and fry until golden brown on both sides, about 2-3 minutes per side.
  8. Drain the fritters on paper towels and dust with powdered sugar if desired.

Notes

Serve warm with fresh fruit, yogurt, or maple syrup. Store leftovers in an airtight container in the fridge for up to two days.
