A comforting skillet meal combining roasted sweet potatoes, smoky BBQ chicken, and gooey melted cheese.

Ingredients

  • 2 medium sweet potatoes, diced
  • 1 lb chicken breast, cooked and shredded
  • 1 cup barbecue sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes and onion. Season with salt and pepper. Cook until sweet potatoes are tender, about 10-15 minutes.
  3. Stir in the shredded chicken and barbecue sauce, mixing it all together well.
  4. Top the mixture with the shredded cheese and cover the skillet until the cheese is melted, about 5 minutes.
  5. Garnish with fresh herbs if desired, and serve warm.

Notes

For a spicier version, add diced jalapeños or use a spicy BBQ sauce.
