A hearty and comforting Sweet Potato Chicken Bowl that brings together roasted sweet potatoes, tender chicken, black beans, and creamy avocado for a vibrant and nutritious meal.

  • 2 medium sweet potatoes
  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into cubes.
  3. Toss them with olive oil, paprika, salt, and pepper until evenly coated.
  4. Spread the cubes on a baking sheet and roast for 25-30 minutes until tender and slightly golden.
  5. Season the chicken breasts with salt and pepper.
  6. Heat a skillet over medium heat and cook the chicken for 6-7 minutes on each side or until fully cooked.
  7. Let the chicken rest for a few minutes before slicing it.
  8. Layer the roasted sweet potatoes, sliced chicken, black beans, and avocado in individual bowls.
  9. Garnish with fresh cilantro and serve with lime wedges on the side.

Notes
