Delightful summer peach cobbler bars with a rich cheesecake swirl atop a crumbly oat crust.

  • 4 cups fresh peaches, sliced
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. Combine the sliced peaches, granulated sugar, lemon juice, and ground cinnamon.
  3. Mix together the all-purpose flour, rolled oats, and salt, then pour in the melted butter.
  4. Press half of the crumbly mixture into the bottom of the prepared pan.
  5. Spread the peach mixture evenly over the pressed crust.
  6. Beat the cream cheese, powdered sugar, vanilla extract, and egg until smooth.
  7. Pour the cheesecake mixture over the peach layer and swirl with a knife.
  8. Crumble the remaining oat mixture over the cheesecake layer.
  9. Bake for 45-50 minutes until golden brown.
  10. Cool completely before cutting into bars.

Notes

Serve with a scoop of vanilla ice cream or whipped cream. Store in an airtight container in the fridge for up to 5 days.
