Delightful nests made from fluffy mashed potatoes cradling a savory filling of seasoned ground beef and veggies.

Ingredients

  • 35 large potatoes (about 4 cups mashed)
  • 3.5 tbsp butter (melted)
  • Salt (to taste)
  • Smoked paprika (to taste)
  • Black pepper (to taste)
  • Oregano (to taste)
  • Fresh dill (chopped, for garnish)
  • 1.1 lbs ground beef
  • 1 onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 red bell pepper (diced)
  • 1 large tomato (diced)
  • 2.5 oz tomato paste
  • 3.5 oz mozzarella cheese (shredded)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the Potatoes: Peel the potatoes and cut them into equally-sized chunks. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.
  2. Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Add melted butter, salt, smoked paprika, black pepper, and oregano to taste. Mash until smooth and creamy. Set aside.
  3. Bake the Nests: Preheat your oven to 400°F (200°C). Grease a muffin tin, then take a scoop of the mashed potatoes and form it into a nest shape. Bake for about 15 minutes or until the edges are slightly golden.
  4. Cook the Filling: Heat a skillet over medium heat. Add the onion and garlic, sautéing until translucent. Add ground beef, breaking it up until just browned. Stir in diced red bell pepper and tomato, cooking for another 3-4 minutes. Mix in tomato paste, season with salt and black pepper, and simmer for a few minutes.
  5. Assemble the Nests: Remove the nests from the oven and carefully spoon the beef filling into the center of each nest. Top each filled nest with mozzarella cheese.
  6. Final Baking: Return the filled nests to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
  7. Garnish and Serve: Let the nests cool for a couple of minutes, then garnish with chopped fresh dill and parsley before serving.

Notes

Can be prepped in advance. Store leftovers in an airtight container for up to 3 days.
