  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Instructions

  1. Prepare your ingredients by dicing the chicken and cucumber, chopping the red onion, and grilling the corn if using fresh.
  2. Make the creamy dressing by mixing mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper in a bowl.
  3. Combine the diced chicken, sweet corn, cucumber, and red onion with the dressing. Stir gently.
  4. Chill the salad for at least 15 minutes for best flavor.
