  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 2 tablespoons lime juice, divided
  • 2 cups cooked rice
  • 1/2 cup chopped cilantro
  • 2 cups charred corn
  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1/2 cup crumbled cotija cheese
  • 1 teaspoon smoked paprika
  • 1/2 cup finely diced red onion
  • 1 jalapeno, minced

Instructions

  1. Marinate the chicken: In a medium bowl, whisk together olive oil, chili powder, ground cumin, garlic powder, and 1 tablespoon of lime juice. Add the cubed chicken and let it sit for 10 minutes.
  2. Sauté the chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken to the pan and sauté for about 8-10 minutes, or until fully cooked.
  3. Prepare the cilantro lime rice: In a separate bowl, combine the cooked rice, chopped cilantro, and the remaining tablespoon of lime juice.
  4. Make the street corn mixture: In a bowl, mix together the charred corn, mayonnaise, Greek yogurt, crumbled cotija cheese, smoked paprika, finely diced red onion, and minced jalapeno.
  5. Assemble the bowls: Layer the cilantro lime rice as the base of each bowl, then add the sautéed chicken on top and heap on the street corn mixture.
  6. Serve and enjoy: These bowls are best served immediately or can be stored in airtight containers for meal prep.
