  • 1/2 cup pecans, toasted (60 grams)
  • 1/4 cup thinly sliced red onion
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Toast the pecans in a dry skillet over medium heat for 4 to 5 minutes until fragrant, then let them cool.
  2. Combine the baby spinach, sliced strawberries, crumbled feta, toasted pecans, and thinly sliced red onion in a large bowl.
