Delicious and refreshing Strawberry Crunch Bars with a buttery graham cracker crust and creamy filling, perfect for summer.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 2 cups fresh strawberries, pureed
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the graham cracker crumbs, melted butter, and sugar in a bowl. Press the mixture into the bottom of a greased 9×9 inch pan.
  3. Bake for 10 minutes, then let cool.
  4. Whip the heavy cream until stiff peaks form, then gently fold in the powdered sugar and vanilla extract.
  5. Layer the strawberry puree on top of the cooled crust, followed by the whipped cream.
  6. Combine reserved graham cracker crumbs with additional melted butter and bake until golden for the crumble.
  7. Sprinkle the crumble over the top of the bars.
  8. Refrigerate for at least 2 hours before cutting into squares.
  9. Serve chilled and enjoy!

Notes

For a deeper flavor, consider adding a splash of lemon juice to the strawberry puree.
