Delicious and easy Strawberry Cream Cheese Muffins that capture the nostalgia of summer with fresh strawberries and creamy filling.

  • 1 cup fresh strawberries, chopped
  • 1/2 cup cream cheese, softened
  • 1/3 cup sugar
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line it with muffin cups.
  2. In a bowl, mix the chopped strawberries and softened cream cheese until well combined.
  3. In another bowl, whisk together the sugar, milk, egg, and vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Gently combine the wet ingredients with the dry ingredients until just mixed.
  6. Fold in the strawberry and cream cheese mixture.
  7. Fill the muffin cups with batter, about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack.
