A vibrant and fresh pasta salad featuring crunchy vegetables, tangy dressing, and creamy cheeses, perfect for spring gatherings.

Ingredients

  • Pasta (your choice, such as rotini or penne)
  • Cherry tomatoes, halved
  • Cucumber, diced
  • Bell pepper, diced
  • Red onion, diced
  • Olives, sliced
  • Feta cheese, crumbled
  • Parmesan cheese, grated
  • Italian dressing or a homemade vinaigrette
  • Fresh herbs (like basil or parsley), chopped

Instructions

  1. Cook the pasta according to package instructions; drain and let cool.
  2. Combine the cooled pasta with the cherry tomatoes, cucumber, bell pepper, red onion, and olives in a large bowl.
  3. Mix together the Italian dressing (or vinaigrette) and chopped herbs in a separate bowl.
  4. Layer the pasta mixture in a salad bowl, starting with pasta, followed by veggies, and sprinkled with feta and Parmesan cheese.
  5. Repeat the layers until all ingredients are used, finishing with cheese on top.
  6. Serve chilled or at room temperature, and let it marinate for better flavor.
