Delightful funfetti blondies with colorful sprinkles and a hint of citrus zest, perfect for spring celebrations.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 cup pastel spring sprinkles
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In a separate bowl, whisk the cooled melted butter together with granulated sugar and brown sugar until smooth.
  4. Add the eggs one at a time, whisking after each addition, then stir in the vanilla extract and lemon zest.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Fold in the pastel spring sprinkles and white chocolate chips gently.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 18 to 22 minutes or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow the blondies to cool completely in the pan before lifting them out and cutting into squares.

Notes

Pairs excellently with vanilla ice cream or whipped cream. Store leftovers in an airtight container at room temperature for up to 3 days.
