A warm, baked twist on traditional sushi, featuring flaky salmon and spicy mayo over sticky sushi rice.

Ingredients

  • 2 cups sushi rice
  • 2 cups water
  • 1 pound salmon fillet
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1/4 cup green onions, chopped
  • Nori sheets, cut into strips
  • Sesame seeds for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the sushi rice under cold water until the water runs clear.
  3. Combine the rice with 2 cups of water in a rice cooker and cook according to the manufacturer’s instructions.
  4. Take your salmon fillet and place it in a baking dish. Drizzle with soy sauce and bake for about 15-20 minutes.
  5. Mix together the mayonnaise, sriracha sauce, and rice vinegar in a bowl.
  6. Remove the salmon from the oven, flake it into small pieces, and mix it with the spicy sauce.
  7. Spread out the cooked sushi rice evenly in a large baking dish.
  8. Top the rice with the flaked salmon mixture.
  9. Bake for another 10-15 minutes until heated through.
  10. Serve warm, garnished with green onions, sesame seeds, and nori strips.

Notes

Adjust sriracha to your spice preference. Leftovers can be stored in an airtight container for 2-3 days.
