A warm and comforting spicy jalapeño popper chicken soup, enriched with bacon and creamy cheese.

Ingredients

  • 1 pound chicken breast (cubed)
  • 3 jalapeños (diced)
  • 6 slices of bacon (chopped)
  • 8 ounces cream cheese (softened)
  • 1 cup sharp cheddar cheese (shredded)
  • 4 cups chicken broth
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • Salt and pepper to taste

Instructions

  1. Cook the bacon until crisp, then remove and leave the drippings in the pot.
  2. Sauté the onion until translucent, then add garlic and jalapeños.
  3. Add the cubed chicken and chicken broth, and bring to a simmer.
  4. Incorporate the cream cheese and cheddar, stirring until melted.
  5. Simmer for a few more minutes and adjust seasoning before serving.

Notes

Serve with crusty bread or cornbread, and top with extra cheese and crispy bacon.
