A comforting bowl of spicy chicken ramen filled with tender chicken, fresh bok choy, and nutrient-rich mushrooms in a savory broth.

Ingredients

  • 2 cups ramen noodles
  • 1 tablespoon vegetable oil
  • 1 pound chicken breast, sliced
  • 2 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 cup mushrooms, sliced
  • 1 cup bok choy, chopped
  • 2 green onions, sliced
  • 1 boiled egg (optional) for topping
  • Sesame seeds (optional) for garnish

Instructions

  1. Cook the ramen noodles according to package instructions and set aside.
  2. In a pot, heat vegetable oil over medium heat. Add sliced chicken and cook until browned.
  3. Add garlic, ginger, and mushrooms to the pot and sauté for 2-3 minutes.
  4. Pour in the chicken broth, soy sauce, and sriracha sauce, and bring to a simmer.
  5. Add bok choy and cook until tender, about 2-3 minutes.
  6. Divide ramen noodles into bowls and ladle the spicy chicken broth over them.
  7. Top with sliced green onions, a boiled egg if using, and sesame seeds.
  8. Serve hot and enjoy your comforting bowl of ramen!

Notes

Feel free to swap the vegetables based on what’s in season. For a vegetarian version, substitute chicken with tofu and use vegetable broth.
