A delightful dish featuring baked potatoes stuffed with a creamy seafood mixture of shrimp, crab, and Cajun spices, perfect for any occasion.

Ingredients

  • 4 large russet potatoes
  • 1 cup cooked shrimp, chopped
  • 1 cup cooked crab meat
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon green onions, chopped
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and pierce them several times with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Bake the potatoes for 45-60 minutes until tender.
  5. Mix together the shrimp, crab meat, cream cheese, sour cream, cheddar cheese, Cajun seasoning, and green onions in a bowl.
  6. Cut the baked potatoes in half lengthwise and scoop out the flesh.
  7. Combine the scooped potato flesh with the seafood mixture.
  8. Stuff each potato half with the seafood mixture.
  9. Return the stuffed potatoes to the oven for an additional 15-20 minutes.
  10. Serve warm, garnished with extra green onions.

Notes

For a twist, experiment with different seafood or cheeses. Leftovers can be stored in the refrigerator for up to 3 days.
