Ingredients

  • 1 pound fresh green beans, trimmed
  • 4 medium potatoes, diced
  • 6 strips of bacon, chopped
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 4 cups chicken broth
  • Salt, to taste
  • Pepper, to taste
  • Optional: thyme, paprika

Instructions

  1. Cook bacon over medium heat until crispy. Remove and set aside, leaving drippings in the pot.
  2. Add onions and garlic to the pot. Sauté until onions are translucent and garlic is fragrant.
  3. Toss in chopped potatoes and cover with chicken broth. Bring to a gentle boil.
  4. Add fresh green beans, salt, pepper, and optional seasonings.
  5. Reduce heat, cover, and simmer until potatoes and green beans are tender, about 20-30 minutes.
  6. Crumble reserved bacon on top before serving.

Notes

For a vegetarian version, skip the bacon and use vegetable broth. Freshness matters; use the freshest green beans for the best flavor.
