  • 1 pound dried white beans
  • 8 cups water
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 4 slices turkey bacon, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 teaspoon dried thyme

Instructions

  1. Soak the beans: Begin by rinsing the dried white beans, picking out any debris or imperfect beans. Place them in a bowl and cover with water, letting them soak overnight.
  2. Combine ingredients in a pot: After soaking, drain the beans and transfer them into a large pot. Pour in 8 cups of fresh water. Add the chopped onion, diced carrots, diced celery, minced garlic, chopped turkey bacon, salt, black pepper, bay leaf, and dried thyme.
  3. Simmer to perfection: Bring the mixture to a rolling boil over medium heat. Once boiling, reduce the heat to low and let it simmer gently for 1.5 to 2 hours, stirring occasionally.

Notes

Pairs well with crusty bread or a fresh salad. Can be refrigerated for up to five days or frozen for three months.
