A delightful sautéed vegetable pasta dish that combines vibrant ingredients with a mouthwatering sauce, perfect for any occasion.

  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon basil
  • Salt and pepper to taste
  • 1 cup cooked pasta of your choice
  • Grated cheese for topping (optional)

Instructions

  1. Sauté the aromatics by heating olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until the onion is translucent.
  2. Add the diced bell pepper and zucchini. Cook for about 5 minutes until the vegetables are soft.
  3. Introduce the can of diced tomatoes, stirring to combine. Season with oregano, basil, salt, and pepper.
  4. Simmer the mixture on low heat for about 10 minutes to allow flavors to meld.
  5. Toss in the cooked pasta and gently mix until every piece is coated in the sauce.
  6. Serve warm with a sprinkle of grated cheese on top if desired.
