  • 1 tablespoon honey
  • 1 tablespoon rice vinegar

  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)
  • Cooked rice or noodles, for serving
  • Vegetables for serving (such as broccoli, bell peppers, or carrots)

Instructions

  1. Place the chicken thighs in the slow cooker, laying them side by side so they cook evenly.
  2. In a bowl, mix the teriyaki sauce, soy sauce, honey, rice vinegar, garlic, and ginger until well combined. Pour this aromatic mixture over the chicken, ensuring each piece is well coated.
  3. Cover the slow cooker and set it to cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
  4. If you desire a thicker sauce, mix the cornstarch with water in a small bowl to create a slurry. Stir this into the slow cooker and cook for an additional 30 minutes on high to thicken.
  5. Once ready, serve the teriyaki chicken over a bed of rice or noodles. Garnish with steamed vegetables of your choice, such as broccoli, bell peppers, or carrots, for a colorful and nutritious finish.

Notes
