A comforting slow-cooked dish featuring tender pork chops and sweet potatoes, perfect for busy weeknights.

Ingredients

  • 4 pork chops
  • 2 sweet potatoes, peeled and cubed
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the pork chops on both sides until golden brown, about 3-4 minutes per side.
  2. Layer the cubed sweet potatoes in the slow cooker, followed by the sliced onions, and sprinkle the minced garlic on top.
  3. Place the browned pork chops on top of the vegetable layers in the slow cooker.
  4. Pour the chicken broth over the pork chops and season with salt, pepper, and paprika.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the pork is tender and the sweet potatoes are cooked through.
  6. Serve warm and enjoy the hearty meal.
