  • 4 medium carrots, chopped
  • 4 medium potatoes, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat the olive oil in a large oven-safe pot over medium-high heat.
  3. Prepare the chuck roast by seasoning it generously with salt, black pepper, thyme, and rosemary.
  4. Sear the seasoned roast in the hot pot for about 4-5 minutes on each side until browned.
  5. Set aside the browned roast to rest.
  6. Sauté the chopped onions and minced garlic in the same pot until softened.
  7. Combine the seared roast with the chopped carrots and potatoes, then pour in the beef broth.
  8. Simmer the mixture, gently combining all the flavors.
  9. Bake the pot covered in the preheated oven for 3-4 hours until the roast is tender.
