A vibrant and refreshing salad featuring juicy watermelon, crisp cucumber, and salty feta, perfect for summer.

Ingredients

  • 6 cups watermelon (seeded and cubed)
  • 1 English cucumber (chopped)
  • 6 oz feta cheese (cubed)
  • Handful of chopped fresh mint leaves
  • 1 fresh lime (zest and juice)
  • Sea salt flakes and fresh ground black pepper (to taste)

Instructions

  1. Cube the watermelon and add to a large serving bowl.
  2. Chop the English cucumber into bite-sized pieces.
  3. Add the cubed feta cheese over the watermelon and cucumber.
  4. Toss in chopped mint leaves for added flavor.
  5. Grate the zest of one lime and then juice it over the salad.
  6. Sprinkle sea salt flakes and freshly ground black pepper to taste.
  7. Gently toss to combine all ingredients without breaking the watermelon.
  8. Taste and adjust the seasoning as desired.
