  • 2 tomatoes, diced
  • 1 potato, diced
  • 2 cloves of garlic, minced
  • 4 eggs
  • Salt and pepper to taste
  • Olive oil
  • Fresh herbs (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat until it shimmers.
  2. Add the diced onion to the skillet, cooking until soft and translucent.
  3. Stir in the diced tomatoes, potato, and minced garlic, cooking until the potatoes are tender.
  4. Sprinkle in salt and pepper to taste, allowing the flavors to meld.
  5. Make little wells in the mixture for the eggs.
  6. Gently crack an egg into each well and cover the skillet, simmering for 5-7 minutes.
  7. Serve hot, garnished with fresh herbs if desired.
