  • 2 medium sweet potatoes, peeled and diced
  • 1 bell pepper, diced (any color)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (e.g., rosemary or thyme) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) to get it nice and hot for roasting the veggies.
  2. Combine the diced sweet potatoes and bell peppers in a large bowl. Add olive oil, minced garlic, salt, and pepper, and toss until well-coated.
