Delightfully nostalgic cookie bars filled with rich salted caramel and topped with a sweet glaze.

Ingredients

  • 1 cup unsalted butter, softened
  • 1.5 cups packed light brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs, room temperature
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 1 cup store-bought or homemade salted caramel sauce
  • Sea salt flakes for sprinkling
  • 1 cup powdered sugar
  • 2 tbsp whole milk or cream
  • 1 tsp ground cinnamon
  • 0.5 tsp vanilla extract

Instructions

  1. Cream together butter and sugars in a mixing bowl until light and fluffy.
  2. Add eggs and vanilla extract; mix until fully incorporated.
  3. Combine dry ingredients in a separate bowl and add to wet mixture, stirring until just combined.
  4. Reserve a cup of dough, then press remaining dough into a greased 9×13 inch baking pan.
  5. Pour salted caramel sauce over the cookie dough base.
  6. Crumble reserved dough over the caramel sauce.
  7. Sprinkle sea salt over the top.
  8. Bake at 350°F (175°C) for 25-30 minutes until golden brown.
  9. Cool completely, then prepare glaze by whisking powdered sugar, milk or cream, cinnamon, and vanilla extract.
  10. Glaze the cooled bars and slice into squares or rectangles.
  11. Serve on a platter and enjoy!

Notes

Store leftovers in an airtight container for up to 3 days at room temperature or refrigerate for up to a week. Freeze for up to 3 months for longer storage.
