A warm and hearty casserole that combines tender rotisserie chicken, zucchini, and creamy goodness topped with cheese, perfect for busy weeknights.

Ingredients

  • 1 rotisserie chicken, shredded
  • 2 medium zucchinis, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup cooked rice or quinoa
  • 1/2 cup cream of chicken soup
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 teaspoon Italian seasoning
  • Optional: breadcrumbs for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded rotisserie chicken, sliced zucchini, cooked rice or quinoa, cream of chicken soup, milk, garlic powder, Italian seasoning, salt, and pepper in a large mixing bowl.
  3. Pour the mixture into a greased baking dish.
  4. Top with shredded cheese and optional breadcrumbs if desired.
  5. Bake for 25-30 minutes, or until the casserole is hot and bubbly, and the cheese is melted.
