Comforting sweet potatoes filled with spiced ground turkey, black beans, and melted cheese, perfect for a cozy meal.

  • 4 large sweet potatoes
  • 1 pound ground turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn (optional)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or your choice)
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork, rub with olive oil, and bake for about 45 minutes or until tender.
  3. In a skillet, cook the ground turkey over medium heat until browned.
  4. Add the black beans, corn (if using), chili powder, cumin, salt, and pepper to the skillet. Stir to combine and heat through.
  5. Once the sweet potatoes are cooked, let them cool slightly. Cut them in half and scoop out a bit of the center to make room for the filling.
  6. Fill each sweet potato half with the turkey and bean mixture.
  7. Top with shredded cheese.
  8. Return to the oven and bake for an additional 5-10 minutes until the cheese is melted.
  9. Serve warm and enjoy the comforting flavors!

Notes

Pairs well with a green salad or roasted broccoli. Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
