These muffins are a delightful fusion of texture and flavor, combining juicy blueberries with creamy cottage cheese for a nutritious breakfast option.

  • 1 cup cottage cheese
  • 1 cup fresh blueberries
  • 1 cup oats
  • 2 eggs
  • 1/2 cup honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. Mix together the cottage cheese, oats, eggs, honey (or maple syrup), vanilla extract, baking powder, baking soda, and salt until well combined.
  3. Fold in the fresh blueberries, being careful not to break them up too much.
  4. Divide the batter evenly among the muffin cups.
  5. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
