Delicious homemade Pop Tarts with a healthy twist, packed with protein and wholesome ingredients.

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/4 cup coconut oil or butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup protein powder
  • 1/4 teaspoon salt
  • 23 tablespoons cold water
  • Fruit preserves or fresh fruit for filling (e.g., raspberry, strawberry)
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) to prepare for baking these delightful treats.
  2. Mix together the whole wheat flour, rolled oats, protein powder, and salt until evenly combined.
  3. Add the coconut oil and honey (or maple syrup) to the dry ingredients and mix until you achieve a crumbly texture.
  4. Gradually add cold water, one tablespoon at a time, until the dough comes together into a cohesive ball.
  5. Roll out the dough between two sheets of parchment paper until about 1/4 inch thick.
  6. Cut the dough into rectangles or shape it to your liking.
  7. Place half of the shapes on a baking sheet, ready for their tasty filling.
  8. Add a small spoonful of fruit preserves or fresh fruit in the center of each rectangle.
  9. Top each filled rectangle with another piece of dough, pressing down the edges firmly to seal.
  10. Bake for 15-20 minutes or until golden brown.
  11. Allow to cool before serving, and if you wish, dust with powdered sugar.

Notes

Store remaining Pop Tarts in an airtight container at room temperature for up to three days, or in the refrigerator for up to a week.
