Delicious protein muffins that are packed with nutrients, perfect for breakfast or a snack.

Ingredients

  • 1 cup oats
  • 1/2 cup protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 2 eggs
  • 1/2 cup Greek yogurt
  • 1/2 cup milk (or almond milk)
  • 1/4 cup honey (or maple syrup)
  • 1/2 cup add-ins (chocolate chips, nuts, dried fruits)

Instructions

  1. Preheat your oven to a warm 350°F (175°C).
  2. In a large mixing bowl, blend together oats, protein powder, baking powder, and cinnamon.
  3. In another bowl, whisk together eggs, Greek yogurt, milk, and honey.
  4. Pour the wet ingredients into the dry mixture and stir until just mixed.
  5. Fold in your favorite add-ins.
  6. Grease a muffin tin or line it with muffin cups and pour the batter into each cup.
  7. Place the muffin tin in the oven and bake for 15-20 minutes.
  8. Once baked, allow to cool before serving.

Notes

These muffins make great snacks and are easy to store for later.
