A comforting fusion of tacos and hearty potatoes, perfect for a quick weeknight dinner or a cozy weekend feast.

Ingredients

  • 4 Potatoes
  • 1 lb Ground meat (beef, chicken, or turkey)
  • 2 tbsp Olive oil
  • Salt to taste
  • Pepper to taste
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 cup Lettuce
  • 2 Tomatoes, diced
  • 1 Avocado, sliced
  • 1/2 cup Sour cream
  • 1 cup Shredded cheese

Instructions

  1. Preheat the oven to 425°F (220°C). Cut the potatoes into cubes, toss them with olive oil, salt, pepper, cumin, and chili powder. Spread them on a baking sheet and roast for 25-30 minutes until crispy.
  2. Cook the ground meat in a skillet until browned; season with salt, pepper, and any other desired spices.
  3. Assemble the bowls by layering roasted potatoes, cooked meat, lettuce, diced tomatoes, sliced avocado, sour cream, and shredded cheese. Serve and enjoy!

Notes

Ensure your potatoes are cut uniformly for even cooking. Adjust spices to your taste, and substitute ground meat with black beans or lentils for a vegetarian option.
