A hearty and nourishing vegan lentil stew packed with vegetables and spices that warms the heart and fuels the soul.

Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, diced carrots, and celery to the pot and sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic, cumin, and thyme, and cook for another minute.
  4. Add the lentils, vegetable broth, and diced tomatoes to the pot. Stir and bring to a boil.
  5. Reduce the heat and let the stew simmer for 25-30 minutes, or until the lentils are tender.
  6. Season your stew with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

This stew can be served alone or with crusty bread or a side salad. It can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
