Delightful cookie bars made with yellow cake mix, pistachios, white chocolate chips, and shredded coconut for a tropical twist.

Ingredients

  • 1 box yellow cake mix
  • 1 cup crushed pistachios
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup white chocolate chips
  • 1/2 cup sweetened shredded coconut
  • 1/2 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Combine the cake mix, crushed pistachios, melted butter, and eggs in a large bowl until smooth.
  3. Fold in the white chocolate chips, shredded coconut, and almond extract.
  4. Spread the batter evenly into the prepared baking dish.
  5. Bake for 25-30 minutes or until edges are golden brown.
  6. Cool in the baking dish before cutting into squares.

Notes

For extra crunch, toast the pistachios before adding. Store in an airtight container at room temperature for up to 3 days.
