Delightful pink coconut snowball cake bars with a rich chocolate base topped with fluffy coconut, perfect for any occasion.

  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups shredded coconut
  • 1/2 cup powdered sugar
  • 12 tablespoons milk
  • Pink food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Combine the flour, cocoa powder, granulated sugar, and salt in a bowl.
  3. Add melted butter, eggs, and vanilla extract to the dry ingredients and stir until smooth.
  4. Pour the batter into the prepared baking dish and spread evenly.
  5. Bake for 20-25 minutes, or until a toothpick comes out clean.
  6. Cool the cake completely on a wire rack.
  7. Mix shredded coconut, powdered sugar, and milk in another bowl; add pink food coloring if desired.
  8. Spread the coconut mixture over the cooled chocolate base.
  9. Chill in the refrigerator for at least an hour before slicing.
  10. Serve and enjoy!
