A healthier take on the classic Philly cheesesteak, these bowls feature juicy beef, colorful bell peppers, caramelized onions, and melted provolone cheese served over cauliflower rice.

Ingredients

  • 1 lb tender beef (sirloin or flank steak)
  • 1 cup bell peppers (sliced)
  • 1 cup onions (sliced)
  • 1 cup mushrooms (sliced)
  • 4 oz provolone cheese (sliced)
  • 2 cups cauliflower rice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced onions and bell peppers, sautéing until they soften—about 3-4 minutes.
  2. Next, add in your sliced mushrooms. Cook until they turn golden brown, about another 3-4 minutes.
  3. Season the beef with salt and pepper, and then add it to the skillet. Cook until it’s browned and cooked to your desired doneness—about 5-7 minutes.
  4. Now, stir in the cauliflower rice and blend everything well until heated through.
  5. Top your mix with provolone cheese and cover the skillet. Let it sit until the cheese melts, about 2-3 minutes.
  6. Spoon the cheesy beef and vegetable mix into bowls and savor every bite.

Notes

For an extra flavor boost, consider marinating the beef in Worcestershire sauce ahead of cooking.
