1/4 cup granulated sugar
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1 cup peanut butter
1 cup powdered sugar
1 tsp vanilla extract
1 cup heavy cream
8 oz semi-sweet chocolate, chopped
1 cup heavy cream (for ganache)
Instructions
Preheat the oven to 350°F (175°C).
Mix together the chocolate cookie crumbs, granulated sugar, and melted butter until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan.
Beat the softened cream cheese, peanut butter, and powdered sugar until smooth and creamy.
Whip 1 cup of heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture until fully incorporated.
Pour the filling over the prepared crust and spread it evenly. Bake for 45-50 minutes until set.
Heat 1 cup of heavy cream in a saucepan until it just begins to simmer. Pour it over the chopped semi-sweet chocolate, allowing it to sit for a few minutes before stirring until smooth.
Pour the ganache over the chilled cheesecake and spread it evenly.
Chill the cheesecake until the ganache is set. Carefully remove it from the springform pan, slice it up, serve, and enjoy.
