Sweet & Tart Peach Lemonade

A refreshing summer drink combining the natural sweetness of ripe peaches with the zing of freshly squeezed lemon juice.

Ingredients

  • 68 ripe large peaches (about 3 pounds)
  • 1/2 cup granulated sugar (for peach puree)
  • 1/2 cup water (for peach puree)
  • 1 tablespoon fresh lemon juice (for peach puree)
  • 1 1/2 cups freshly squeezed lemon juice
  • 1 cup granulated sugar (for simple syrup)
  • 1 cup water (for simple syrup)
  • 46 cups cold water
  • Fresh peach slices
  • Lemon wheels or wedges
  • Fresh mint sprigs
  • Ice cubes

Instructions

  1. Prepare the Peaches: Wash, pit, and dice the peaches.
  2. Create the Peach Puree: In a saucepan, combine the diced peaches with 1/2 cup of sugar, 1/2 cup of water, and 1 tablespoon of fresh lemon juice. Simmer until the peaches are soft and fragrant, about 10-15 minutes.
  3. Mash and Strain the Mixture: Mash the mixture with a fork or potato masher. Strain it through a fine sieve into a bowl to achieve a smooth peach puree. Allow it to cool completely.
  4. Make the Simple Syrup: In another small saucepan, dissolve 1 cup of sugar in 1 cup of water over medium heat. Stir until fully dissolved, then set aside to cool.
  5. Combine Lemon Juice and Syrup: In a large pitcher, combine the freshly squeezed lemon juice with the cooled simple syrup. Stir it well to integrate the flavors.
  6. Mix Peach Puree and Water: Fold the peach puree into the lemon-sugar mixture, adding cold water to taste—start with 4 cups and adjust as necessary.
  7. Chill and Serve: Chill your lemonade in the refrigerator for at least 30 minutes before serving. When ready, pour over ice and garnish with fresh peach slices, lemon wheels or wedges, and mint.

Notes

Store leftover lemonade in the refrigerator for up to 3 days. For a less sweet drink, reduce the sugar in both the puree and simple syrup.
