Ingredients

  • 3½ cups all-purpose flour
  • 2¼ tsp active dry yeast
  • 1½ tsp salt
  • 1¼ cups warm water
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ¾ cup finely grated Parmesan cheese (plus extra for sprinkling)

Instructions

  1. Activate the yeast: In a mixing bowl, combine warm water and active dry yeast, allowing it to sit until frothy, about 5–10 minutes.
  2. Mix the dry ingredients: In a large bowl, whisk together flour and salt.
  3. Combine ingredients: Add the yeast mixture to the flour along with olive oil, garlic, and Parmesan. Stir until a shaggy dough forms.
  4. Knead the dough: Transfer dough onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  5. First rise: Place dough in a lightly oiled bowl, cover with a towel, and let it rise in a warm spot until doubled, about 1 hour.
  6. Shape the bread: Punch down the dough and turn it onto a floured surface. Shape into a round loaf and place on a baking sheet.
  7. Second rise: Cover loaf with a towel and let rise for 30 minutes.
  8. Preheat the oven: Preheat oven to 425°F (220°C).
  9. Sprinkle and score: Poke shallow slashes on top with a knife and sprinkle extra Parmesan if desired.
  10. Bake the bread: Bake for 25-30 minutes until golden brown and sounds hollow when tapped.
  11. Cool and enjoy: Remove from oven and let cool on a wire rack before slicing.
