A comforting bowl of creamy Parmesan chicken soup, perfect for chilly days.

Ingredients

  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery, and sauté until softened, about 5 minutes.
  3. Add garlic and cook for another minute until fragrant.
  4. Stir in the diced chicken and cook until no longer pink, about 5-7 minutes.
  5. Pour in the chicken broth and bring to a simmer.
  6. Reduce the heat and stir in the heavy cream and Parmesan cheese until melted and smooth.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.

Notes
